Delicious eaten fresh! Their skin color is bright green often with a soft red blush. Skin color shows just a very subtle color change while ripening. Green Anjous will be green even when it is fully ripe.
The Anjou is an all-purpose pear. They are juicy and sweet when ripe with a refreshing lemony-lime flavor. The dense flesh holds up well when heated like in baking, poaching, roasting, or grilling and they are delicious raw in salads or sliced to eat as a snack.
Since this pear does not show ripeness by color, it is recommended to test the top near the stem with a slight press of the thumb until it gives slightly. This is because the pear ripens from the inside out and the top is closest to the inside.
