Sweet Potato Cinnamon Roll Cake

Cake ingredients:

3 cups unbleached flour Directions:                              Preheat oven 350 degrees

1/2 teas nutmeg                                                           Grease a 13 x 9” baking pan.

1/4 teas Real Salt                                                         In a large bowl combine flour, sugar, salt,

1 cup Organic Sugar                                                    and baking powder. Stir with a fork to combine

2 teas baking powder                                                    In another large bowl, beat sweet potatoes and

3 cups cooked QCF Sweet Potatoes                            milk until smooth. Add beaten eggs, and vanilla,

1 1/2 cups milk                                                              beat until combined. Slowly add flour to sweet

2 Happy Hen Eggs                                                        potato mixture, mixing until just incorporated.

2 teas vanilla                                                                 Slowly stir the melted butter into the batter until well combined.

1/2 cup Minerva Butter                                                  Pour batter into prepared pan. Make Topping

Topping

 1 cup Minerva Butter                                                 Mix all the topping ingredients together until well combined. Drop

1 cup Organic Brown Sugar                                 evenly over the batter and swirl with a knife. Bake cake for 30-35 min

2 tablespoons flour                                                     

 3 tablespoon cinnamon                                               After cake is baked, cool slightly while making the glaze.

Glaze

2 cups Organic powdered sugar                          Combine glaze ingredients, mix until smooth. Glaze cake while warm

3 tablespoons milk

4 tsp vanilla 

1 cup chopped pecans
